Italian Pastry Chef

Hi!

I'm Federica.

I have always loved baking cakes, after High School I decided to train as a pastry chef in the small town I grew up in South Italy. 
I loved it so much and decided to enrol in “Università dei Sapori” (literally “University of Flavours”) in Perugia. 

After graduation I worked in Rome, in Sardinia, Costa Smeralda, and in Milan.

I moved to London in 2015 and worked for 5 fantastic years at the Lanesborough Hotel, at the, now close, Michelin star restaurant “Celeste”. 
I moved to Paris for a training at Yann Couvreur and joined the opening of the pop up in Harrods as Sous chef.

I've worked with fantastic chefs and learned a lot in 12 years:
Chocolate, Praline, artistic Sugar, Viennoiserie, Sourdough bread, AT pastries and Plated dessert. 

I also work part time at Primrose Bakery and consultant at Geode in Knightsbridge. 

I took some classes: 
-Bread and Focaccia at CastAlimenti
-Artistic Sugar showpiece at CastAlimenti 
-Panettoni and Colombe with Oscar Pagani
-Biscotti, Decori and Mignon with Emanuele Forcone

I read a lot of pastry books, I love to try new recipes and always willing to improve my skills. 

I love animals, I'm Vegetarian and soon you'll find many more vegan options. 
I love gardening and spending holidays in the countryside.
